Buried in the beautiful modern cities of India, is a history which awakens every evening in the windows of the places, in the glorious saga of clan and taste of food. This contemporary face of Delhi city is composed of layers of seven different cities. The glorious market of the Chandni Chowk market is a bearing testimony to the history that Delhi has forgotten. The history of this place is thousands of years old and was founded seven times and destroyed. This is quite evident in the food here.
The food here was influenced by the cuisines of the dynasties of the Gujjars, Rajputs, hats, Chauhans. After the Sulatantes was established, Turkish, Afghan and Persian food came here, the khatris from Punjab, the Kayastha from Mathura, the Baniyas, and Brahmins from Uttar Pradesh led to the growth of a multi-faceted culture. That benefited Delhi as from both within and outside the country the best of food and clothing arrived in Delhi. The food of Delhi is popular throughout the country because of its spicy and tangy taste. But there’s an interesting story behind this spicy and greasy fare.

It is said that when this place was under Shahjahan’s reign his personal physician was very upset. He was upset that the king had sought everybody’s advice to build the city, but not him. When the king asked for the advice he said that the water of the Yamuna was not potable and everybody would be killed.”All the men will have intestinal problems. All will die. ” The king asked, “what can I do now? I have already built the city.” “I can’t desert it and go back to Agra. What should we do?” “Is there’s any enemy?. Then the physician said, “you will have to eat very spicy food.” But if you eat very spicy food there would be other complications. So, a lot of clarified butter will have to be used for greasiness. So it can resist the side effects of the spices.  those who were non-vegetarians started adding a lot of spices and clarified butter. This solves the problem for non-vegetarians. While vegetarians started preparing ‘chaat’, a lot of chilies, a lot of sourness, a lot of spices. This was for vegetarians and slowly a range of vegetarian dishes was developed.

This is how the famous Delhi chaat came into existence, its admirers come from far-off places to relish it. While the traders and marketers used Chaat to entertain themselves.
